I work a lot of overtime. Does this count towards my pro-rata holiday entitlement?

Probably not. Overtime work does not count towards the statutory minimum 5.6 weeks' pro-rata paid holiday entitlement, unless the overtime is specified in your contract. Your employer does not have to count uncontracted overtime.
