A restrictive covenant is an express term in the contract which seeks to prevent the employee from carrying out a particular activity, usually in competition with the employer.
Given the significance of such a term, any attempt to add it to a contract without agreement would be a fundamental variation of contract. Provided that you clearly express your rejection of an unwanted new term, and regularly maintain your opposition to it, the employer could not lawfully vary your contract in this way.
